He wins us over with his sincere candor and the brightness of his smile excited by the moment he is living, visibly dedicated to the festivities of his town and its flagship product, an emotion with which all of us who treasure popular celebrations can easily identify ourselves. The festivities, whether from town, neighborhood or city, they are carried deep inside. And its dishes and typical products leave us a mark that goes beyond the purely gastronomic.

How is the blood sausage from Canillas del Aceituno
Beyond the charming image of Sofía, daughter of the mayor who is also present, and the reporter from the local Axarquia television, the scene gives us the opportunity to approach a little-known Malaga town outside his province to find out what makes the other great protagonist of it, the black pudding, special.
We already know that it is a sausage of very old origin elaborated based on pig blood, also with varieties in other countries and cultures, but in Spain it has a more special presence and importance. Although the one from Burgos is the best known, our country treasures dozens of varieties that follow the craft tradition of each locality, with a great link to festivals and special occasions.
Canillas del Aceituno is a municipality located in the eastern part of the province of Malaga in a rich Axarquia mountain range, at the foot of the Maroma peak. On the last Sunday of April, normally taking advantage of the entire weekend, one of its most important festivals takes place, dedicated to the Virgin of the Headin whose honor a mass is officiated and whose image is taken out in procession.
But the star sausage steals almost all the prominence from the Virgin, in such a way that this occasion is officially known as the day of the black pudding. After the pandemic, this year the twenty-second edition has been held, recovering the usual acts, including the free public distribution of blood sausage, well accompanied by beer and wine “from the field”.
The canillera black pudding is made by hand following the traditional recipe inherited through generations, differing mainly from that of Burgos and others because it does not contain rice and the filling mixture is prepared with onionwhich makes it especially juicy and less greasy than others.

The preparation requires at least two days and the precise formula varies slightly depending on the establishment, but they all agree that the onion should occupy between half and a quarter of the sausage mixture. The other basic component that gives it a particular flavor is the seasoning or mixture of spices, highlighting the matalahúva or green anise, cumin and paprikain addition to the essential pepper.
The strings are cut into thick cylindrical pieces and are grilled directly on the street during the festival, in which thousands of kilos of blood sausage are usually distributed along with other sausages and typical products of the area. Once well browned and slightly crispy on the outside, the portions are served with slices of bread, as they have the perfect texture for shred your meat and eat it as a toast or montadito.
