Nothing better than taking advantage of the Easter holidays to prepare homemade sweets, and not just torrijas or pestiños. Are vanilla cookies “easter bunnies” They are especially ideal for following tradition and hiding them around the house in small bags so that the children of the family are entertained while they look for them.
Unlike cookies decorated with colored icing, in this case I have chosen to simplify them directly adding the colorings to the dough portions, in order to facilitate the work and so that the little ones can help us in its preparation. If you do not have gel dyes, you can always try the liquid ones sold in any supermarket, although the colors will not be as intense, or dye them with natural ingredients such as strawberries, raspberries, matcha tea or beets.
We will begin beating with a whisk butter at room temperature along with sugar for five minutes. Next we add the egg along with the vanilla essence and beat until it is integrated.
So we add the flour little by little and we form a soft dough but one that does not stick to the fingers. If it seems very dry, we add a teaspoon of milk. We divide the dough into as many portions as the colors you want to prepare. We add a few drops of coloring, preferably gel, and knead each ball of dough as if it were plasticine until we see the integrated color.
Next we prepare some baking paper and stretch each portion with a rolling pin between two papers, cover it and let it cool in the refrigerator for twenty minutes.
We preheat the oven to 170ºC with heat up and down. Come on cutting the cookies with an Easter bunny cutter, or an oval one if we want them in the shape of an egg, placing them on a tray lined with parchment paper.
We bake them for 18 minutes. We take them out of the oven and let them rest for five minutes on the plate, then placing them on a rack to finish cooling.
