Ours with this recipe for meatballs with cheese and onion sauce from The kitchn was love at first sight and our instinct has not failed us.
In addition to being a simple recipe to prepare, it is delicious and spreads enough to feed an army. Especially if we accompany them with a generous portion of French fries, mashed potatoes or white rice.
To make it less difficult to prepare, you can make the meatballs on one side and the sauce on the other at different times. Then you just have to put both preparations together and give them a final cooking stroke before serving. Although I prepared the sauce at the same time that the meatballs were in the oven and it turned out to be very easy.
The slowest thing is to poach the onions, but once they are on the heat do not require any attention. You just have to stir from time to time and that’s it. While this is happening there are many other things we can do, such as preparing the accompaniment, cooking other recipes or resting…not everything is going to be work.
In a deep, wide bowl, mix the egg with the Worcestershire sauce, panko, grated garlic clove, grated cheese and the leaves of half the thyme. Season with salt and pepper and add the minced meat. We stir well until we obtain a homogeneous mass in which all the ingredients are well integrated.
We take small portions, ball them and place them in a lightly greased baking dish. We cook the meatballs in the oven, preheated to 180 ºC with heat up and down, during 15 minutes. We can also make them in the air fryer, reducing the time in half. Once ready, we remove them and reserve.
Peel the onion and cut it into fine julienne strips. We sauté it in a frying pan with the butter, adding a little salt so that it release your juices. We do it over medium heat, stirring occasionally, until it is very tender. It will take about 25-30 minutes. Add the rest of the thyme leaves, black pepper to taste and the flour. We stir and cook for a couple of minutes.
Pour in the white wine and let it evaporate over high heat. Finally we add the meat broth and let the sauce cook for 15 minutes, during which time will thicken slightly. Finally we add the meatballs, we boil them for a final time for about two or three minutes and we serve.
