We are almost halfway through January but the Christmas hangover is still in the air. It is inevitable that on these dates the searches for “diet to lose weight” dishes return, no matter how much we do not like to talk too much in those terms. Get balanced meals and less copious, but nutritious, is key to shedding possible extra pounds after Christmas.
More than losing weight, what I’m sure we all want, deep down, is to return to a healthy routine of homemade dishes and comforting, with less heavy digestion and a simple essence, no less tasty for that. And everything is also noticeable in our Walk around the cuisine of the network, in which we find more homely and balanced recipes, with a notable tendency to take advantage of seasonal products in lighter but appetizing menus.
vegetable creams
Winter and post-Christmas diet are almost synonymous with vegetable creams, the equivalent of summer gazpachos when temperatures drop. We love them because they admit a thousand ingredients and variations, they are very simple and allow them to be ready in advance, even saving portions to freeze. There is nothing better for dinner after an exhausting day or to comfort the body if we catch a cold or flu process.
These days we have seen very appealing new ideas on the networks, such as the suggestive cream of roasted vegetables with mustard of Loleta; with how many fans we are in Direct to the Palate After roasting the vegetables we can imagine the great flavor of this proposal, with that special touch of mustard that we could even make spicy.
In Julia and her recipes, a romanesco cream with a perhaps less striking color, but that the author very wisely finishes off with uncrushed pieces of the precious vegetable, whose intricate shape science revealed to us some time ago. As healthy as broccoli or cauliflower, its flavor is softer and more pleasant for those less fond of it. brassica, satiating but very light.
We close this first course with two recipes with more common ingredients, but without ceasing to have a special putno. In Mercado Calabajio they share one of their latest favorite creams, which emerged during the past confinement, based on leeks and potato and with ham trimmings broth. For her part, María from In my little kitchen recommends a recipe adapted from the Christmas book by Jamie Oliver, with roasted pumpkin and apple, which sounds most comforting.
Main courses
We pass to more dishes complete that, depending on the quantities that we serve, we could combine as mains using the previous creams as starters in a mid-day menu. And without losing sight of winter vegetables.
We start with the vegetarian stew proposed by Raúl de Contigo en la playa!, who proposes us to prepare the traditional chickpea stew without meat and sausages to obtain a lighter and less heavy stew, but also nutritious and full of flavour. as tasty as vegetable and mushroom stew that Cristina de Espía proposes to us in the kitchen, tremendously appetizing with that color and vegetable textures.
If we prefer to include some meat on the menu, chicken is the king of diets, even if it is a somewhat undeserved fame that does not always fit reality. Be that as it may, the orange chicken with natural pineapple Knife and Fork does not sound like a diet dish at all, but it is still light, very healthy and very complete. They also opt for chicken in Frabisa’s kitchen with their chicken and noodle soup with homemade broth, and gives us ideas to take advantage of the meat of it.
In Cooking between olive trees we have another idea to take advantage of this bird with a rich recipe of chicken and mushroom broth rice, and in Craving in your kitchen the Mallorcan recipe of rabbit with onion It reminds us that this small mammal is also a lean, digestive and highly nutritious meat.
Finally we end this walk with seafood flavors, leaving aside the overpriced seafood that packed the markets a few weeks ago. We really like the recipe. artichokes in green sauce of Cook and mother, with some delicious clams that go so well with this winter vegetable, and they also ask for bread to be dipped potatoes with cuttlefish de Cocina familiar, a kind of marmitako in an economical version that Javier completes with mussels.
