Canned white asparagus is one of those items that I always have in my pantry. They get me out of a lot of trouble, either drained and with a little mayonnaise or as an ingredient in recipes like this one cold cake. A classic in my family cookbook, this time in version 2.0.
And I say version 2.0. because the basic formula that I have always used only had white asparagus, eggs, liquid cream, salt and black pepper. This is an improved recipe that incorporates grated parmesan cheese and a pinch of nutmegsomething that elevates it to another higher level.
On the other hand, since I don’t really feel like turning on the oven, I have tried to prepare it in microwave and the result has been great. It is juicy, the time invested is considerably reduced and also the energy expenditure. Be that as it may, I will tell you below how to prepare it in both ways: in the microwave and in the traditional oven.
Drain the asparagus, cut the buds from some of them and reserve them for decoration. We introduce the rest of asparagus in the glass of a blender. Add the eggs, liquid cream and Parmesan. we spice up to taste with nutmeg, salt and pepper.
We grind until we get a homogeneous mixture that we pour into a mold suitable for microwaves or conventional ovens, depending on whether we use one or the other appliance. In any case, butter the mold first and sprinkle it with breadcrumbs to make it easier to remove from the mold.
microwave cooking We cover the mold with plastic wrap and click to make a few holes. We introduce it into the micro and program 10 minutes at 800 w of power. Every microwave is different, so it is best to check halfway through the time to see if it is necessary to adjust the time or power.
Conventional oven cooking. Place the mold on a baking tray and cover the base with a couple of fingers of water. We take it to the oven, preheated to 160ºC with heat up and down, for 25-30 minutes or until it looks curdled.
Once the cake is cooked, we wait for it to temper before unmolding and serving. We can decorate it with a thin layer of mayonnaise on top, the reserved egg yolks and some fresh parsley leaves. We can also let it rest in the fridge and serve very fresh.
