Eating a quick, healthy and delicious dinner may seem like an impossible equation to solve, but today we are going to show that nothing is further from reality. At DAP we love to surprise you with recipes that meet these three requirements. Today we opted for a dish that is a true explosion of flavour: the famous flamenco eggs, in a light and express version that will be the star of your dinner.
The ingredients are what we all usually have at home, nothing exotic or difficult to find: eggsassorted vegetables and a touch of ham (or chorizo).
The preparation could not be easier. In a large skillet, vegetables are sautéed with a little olive oil until tender, add the ham and finally, crack the eggs on top. Cover the pan and allow the eggs to cook to taste. In less than 10 minutes, you have a delicious dish.
In nutritional terms, flamenco eggs are a complete and balanced dish. Eggs provide us with protein, while vegetables provide fiber, vitamins and minerals. The ham adds a touch of flavor without increasing the calories too much, making it a light and very healthy dinner.
It goes without saying that if you want to give the recipe a twist there is hundreds of options. You can replace the ham or chorizo with bits of chicken or tofu, if you prefer a vegetarian option. The vegetables are also fully customizable: peppers of various colors, aubergines, zucchini… Imagination is the limit! To finish, we suggest you accompany these flamenco eggs with a good sourdough bread to dip in the yolk and a young and fruity red wine that will contrast wonderfully with the flavors of the dish. And if you opt for a non-alcoholic option, a cold tea with lemon and mint will be a delicious alternative.
