Autumn is time for chestnuts and the festival of All Saints the day on which it is most typical to consume them. But although we usually eat this roasted nut as an appetizer or snack, it is also ideal for preparing some dishes, such as this exquisite chestnut cream.
Typical of the Cantabrian Coast, especially Asturias and Galicia, chestnut cream is a dish as simple as it is delicious. The main ingredient is roasted chestnuts, which we can make in the oven or following our recipe for roasted chestnuts in the microwave.
Once you have the roasted chestnuts and shovel, you just have to proceed as if it were any other cream, making a sauté of onion and leek, and then cooking the vegetables with the chestnuts and water or, better yet, vegetable broth. Beat the mixture well, add a bit of cream or evaporated milk and that’s it. Tremendous silverware.
Chestnut cream is not only delicious, it is also very healthy. Chestnuts, unlike other nuts, are low in fat, but rich in complex carbohydrates and fiber, which makes them a sustainable source of energy. In addition, they provide B vitamins, vitamin E and minerals such as potassium and magnesium. In combination with vegetables, you get a balanced dish that provides essential nutrients without sacrificing flavor.
