Turn on the oven at 160ºC.
In a bowl, pour the sugar and mix with the oil to dissolve crystals. Then add the cocoa powder together with the salt and baking soda slowly to avoid the appearance of lumps. Opt for a wire whisk or fork to integrate.
Then add the coffee, milk or vegetable drink, zest and orange juice to the mixture. Again stir and integrate. Finally, carefully incorporate the wholemeal flour, ensuring that there are no hardness or compact blocks. The best thing in this case is to incorporate spoonfuls while stirring simultaneously until reaching a homogeneous and smooth mass deep brown. Since the preparation does not have eggs, it can be tried to rectify the amount of sugar.
Add the chopped nuts. Pour into a silicone mold or one previously oiled and take to the oven to cook for 40 to 50 minutesuntil when inserting a toothpick it comes out dry.
Once ready, remove from the oven and let rest for 10 to 15 minutes, before unmolding.
The proposed amounts yield for a round sponge cake in a mold with a diameter of 18 cm. Optionally, you can make a coating with peanut butter, cocoa and nuts or melted dark chocolate and thus transform it into a cake.
