1. Recipe for cheese ravioli with asparagus and salmon
Mix the three types of cheese until you get a paste and reserve it. This will be the ravioli filling that we keep in the refrigerator until the moment of using.
for the dough
Make a volcano of flour on the countertop and place the egg, a pinch of salt and a tablespoon of oil inside. Mix all the ingredients and knead until smooth. Wrap the dough in cling film and let it rest for 30 minutes in the fridge.
We stretch the pasta with a special pasta machine (we can also use a roller). We tighten the rollers in each new pass so that it is very fine. We extend two sheets that have the size of the ravioli mold and we use one for the bottom part -the one that we will fill- and another to close our pasta.
Fill each hole with the mixture of four cheeses, cover with the other sheet on top and pass the rolling pin over it to cut the ravioli. We cook them for a couple of minutes in a saucepan with plenty of salted water at the same time that we prepare the sauce.
for the sauce
Remove the lower end of the asparagus. Cut into one-centimeter pieces leaving the yolks whole. Heat plenty of water in a saucepan and blanch the asparagus for 30 seconds. Remove, cool and reserve.
we cut diced salmon. Heat a little oil in a frying pan and fry it. Add the asparagus, the yogurt and the liquid cream together with a scoop of the water used to cook the pasta. Season to taste.
Remove the ravioli from the saucepan with a slotted spoon, so that they drain well, and transfer to the pan with the sauce. We give them a last one-minute boil and serve them immediately.
