If there is a fruit that I like to use in desserts and sweets, it is Applewhen it is cooked it is honeyed and with a very pleasant texture, totally moldable.
This sponge cake recipe with apple and pastry cream that I explain to you to do with and without Thermomix has been a delicious discovery.
To lighten the work a bit, I recommend you prepare the pastry cream the night before, especially if you are going to make it following the traditional method, so you have enough time to cool down and get bodynecessary to later make the grating on the raw sponge cake.

For make the pastry cream with Thermomixput all the ingredients in the glass and program 7 min/90ºC/speed 4. Pour into a pastry bag with a smooth nozzle, let cool and reserve in the refrigerator.
To make it without Thermomix, we heat the milk with the cinnamon powder, without letting it boil. In a bowl, mix the sifted flour with the cornstarch, the vanilla sugar and the sugar, add the yolks and a little milk and beat well with a whisk. Add this mixture to the milk and bring it to a boil over low heat, stirring constantly with a wooden spoon until it thickens. We remove from the fire, pour into a pastry bag with a smooth nozzlelet cool and reserve in the refrigerator.
In both preparations, we peel the apples, cut them into quarters, remove the seeds and cut each quarter into not too thin slices. Put them in a bowl and sprinkle them with lemon juice. We reserve them. Preheat the oven to 180ºC. Line a 30×40 cm mold with baking paper and reserve it too.
To make the cake with ThermomixPlace eggs, sugar, cinnamon and vanilla sugar in mixing bowl and beat 3 min/50ºC/speed 5. Add oil and cream and mix 10 sec/speed 5. Add flour, salt and yeast and mix 10 sec/speed 6. Finish mixing with the spatula and pour into the prepared mold.
To make the cake without Thermomix, beat the eggs with the vanilla sugar and the sugar until the dough whitens. Add the cinnamon, oil and cream and beat again. Sift the flour, salt and yeast, add them to the previous mixture and stir with a spatula making enveloping movements. Pour into the prepared pan.
For both preparations, with the pastry cream we form a grid on the cake dough, leaving squares of approximately 3-4 cm. We distribute the apple slices in the holes and bake for 35 minutes. Remove the cake from the oven and brush it with the apricot jam. We cut into portions and serve.
