San Isidro is the patron saint of the city of Madrid, whose feast is celebrated on May 15. For the more traditional, it is customary to spend the day on a pilgrimage in the Pradera, which is filled with stalls selling food, drinks and, of course, a wide variety of donuts of the saint.

Introduce two of the eggs (reserving the third to brush the donuts), the sugar, the salt, the oil and the anise liqueur in a wide and deep bowl. Beat with metal rods at medium speed for about 10 minutes to bleach mix.
Sift the flour and chemical yeast. We add it to the previous mixture, along with the aniseed grain, and mix until we obtain a homogeneous and soft mass, which barely sticks to fingers. If we need to add more flour, we do it little by little until we reach the point.
Divide the dough into walnut-sized portions and roll into balls. We make a hole in the center of each ball, opening it a few about two centimeters. Place the donuts on a baking tray covered with parchment paper.
Beat the third egg and brush each donut with it. Put the tray in the oven, placing it at the base (or solera), and cook for 10-12 minutes or until they are well browned. Remove and let cool on a wire rack before serving.
