Take the onion, peel and cut into julienne or slices. In a frying pan, with a few drops of olive oil, sauté onions until slightly translucent. This step should take about 5 minutes. Once ready, remove from heat and cool.
In a bowl, mix the dry ingredients: corn flour (extra fine corn flour), baking soda, salt and pepper. Add the milk to the dry ingredients. Mix until well incorporated to avoid lumps. Add the sautéed onions to the mixture. Mix well to ensure even distribution.
Take the fresh cheese and cut into cubes. Add to the mixture and stir. Pour into a mold suitable for the oven, whether silicone or glass (previously oiled) and bake for 45 to 55 minutes, until it reaches a golden color. You can also check the point by inserting a stick into the center, it should come out clean.
Once ready, remove from the oven and set aside to let the temperature drop. Cut into squares or portions of the size you like.
