These red peppers are stuffed with a mixture of brown rice and vegetableswith a plus of mozzarella cheese on top for a gratin effect. From Karlos Arguiñano’s vegetarian repertoire, I came up with this recipe while watching his television show and I found it so easy and delicious that I made my own version. It is a classic dish that everyone likes and makes an exquisite lunch or dinner.
They can be served as is, or topped with a salad of seasonal greens and avocado for a complete meal. Personally, I love preparing stuffed vegetables such as stuffed eggplant, stuffed round zucchini, and these fabulous stuffed peppers.
Cook the brown rice with water (or vegetable broth) for the time established by the manufacturer and set aside.
Wash the peppers and make a cut at the top to remove the lid. Cook between courses in the microwave at medium temperature for 5 minutes. Once outside, remove the lid and remove the seeds inside.
In a frying pan, sauté the onion for a few minutes in a pan with olive oil. Time to add the cubed green pepper and fry for 2 more minutes. Add the cooked rice and season with salt, pepper and ground cumin. Add the corn and peas. Mix to incorporate the flavors. Finally, add the fresh spinach leaves, turn off the heat and integrate with the residual heat.
Take the hollowed pepper and with the help of a spoon, pour the previous filling of rice and vegetables. Arrange on a plate suitable for the oven. Sprinkle the mozzarella cheese over each pepper. Drizzle with a drizzle of oil and bake in the oven for 30 minutes at 180 C until the surface is melted and golden.
