We have few easier and richer recipes to our credit than this one onion and cheese coca with herbs. In less than 20 minutes it is in the oven and half an hour later we have it ready to sink our teeth into. It is perfect for sharing, as part of a celebration buffet like the one that has always been set up in my house on Three Kings Day.
The way it really looks good is using a mandolin to get very fine discs, about three millimeters. I am aware, however, that it is not a utensil present in every house, so if you handle the knife well, you can slice the onions by hand. A little expertise and you’re done.
The combination of onion, cheese and herbs is exceptional. These last two ingredients can be adapted to what you have at home. Of course, my recommendation is that the cheese be strong. A cured Manchego or an Idiazábal are perfect for this preparation. And regarding the herbs, I have used thyme and rosemary, but oregano, sage, parsley, tarragon, dill or any other aromatic will work just as well.
Peel the onions, cut them in half and cut into thin discs the widest part (saving the ends for other preparations). We grate the cheese. We reserve both ingredients.
In a wide and deep container we mix the water, the oil and the beer. Add a pinch of salt and incorporate the flour little by little. We stir with a spoon initially and, when more can be handled, the we knead on a clean work surface until a homogeneous mass is obtained.
We spread the dough on a baking tray, which is very thin, forming a all around border. Cover with the cream cheese, place the onion slices on top and season. Sprinkle with the herbs (thyme and rosemary in my case) and with the grated cheese.
Water with a thread of extra virgin olive oil and cook in the lower part of the oven, preheated to 200ºC with heat above and below, for about 30-35 minutes or until the edges of the dough begin to look golden. We serve immediately.

We can serve the onion coke with herbs as part of a snack, accompanied by other types of appetizers and some beers, wines or the drink that we like the most. It is also an excellent option for dinner, with a green salad, just as we have done. It is delicious freshly baked.
