It smells like home and the kitchen of a lifetime when the noodle soup steams from the door from the kitchen, waiting for us to pick up the spoons and rattle the bowls on the table.
There are few dishes cheap, simple and at the same time comforting like a good soup, a plan that always appeals —even on not-so-cold days— and that helps us warm up our body and soul a little.
Today we are not going to discover America gastronomically, but we are going to give you a couple of little tracks so that your noodle soup is the best in the world —with the permission of your grandmother, mother-in-law and mother—.
Naturally, you can play with the type of noodles you prefer, whether they are scalp or somewhat thicker, or if you have children at home, the classic soup of stars or of letters that so many good moments have given us in childhood. The key, as always, a good chicken broth.
Put all the ingredients in a pot with cold water to boil and let’s go defoaming every 10 or 15 minutes.
We cook everything together for about three hours over low heat or 45 min in a pressure cooker and at the end add salt if necessary.
Strain and reserve the meat for old clothes or some croquettes and boil again a liter and a half of broth and add the noodles without stopping to move so they don’t stick.
We cook three or four minutesaccording to the manufacturer, and we serve the noodle soup very hot, accompanied if we want by diced meat.
