Today we have prepared a wonderful comforting recipe, an Iberian pork stew, the recipe for extremeño stewperfect for spreading bread in the sauce and enjoying the most tender and tasty meat, which is prepared in the simplest way with ingredients that we always have at home.
The essentials for this stew is that we are going to prepare this recipe with Iberian pork ribs and with a piece of Iberian pork secreto, to get a truly unforgettable stew, one of those that create fans and that we will ask for many times at home.
Taking into account that it has a good stir-fry and plenty of vegetables, this recipe goes a long way and we can even qualify it as an economical recipe, despite the fact that Iberian pork meat is always more expensive than white or Duroc pork. However, you can replicate it with the latter if you prefer to lower costs, with a similar result.
Finely chop the green and red peppers and the onion, all in brunoise or fine cubes. Sauté them in the cocotte where we are going to cook the entire recipe on two or three tablespoons of extra virgin olive oil. As they soften cut the ribs into portions of two or three pieces and the secret in small slices.
Add the meat and sprinkle it with salt, pepper and paprika. We turn a couple of times so that the raw color is removed and add the tomato, the choricero pulp, and the meat broth. Stir well and bring to a boil. Add the carrots cut into slices of one or two centimeters, according to our taste, and a good splash of red wine and let it cook for half an hour.
We taste and rectify salt. We keep an eye on the point of meat, looking the bones of the ribs, which with cooking will begin to show as the meat retracts and shrinks. When we see that it is almost there, we peel a couple of potatoes and chop them.
When the meat is very tender, we add some fried potatoes. -I cut them into squares and made them in the fryer without oil- and let them soften a little in the sauce with the remaining heat. We serve quickly.
