This year the Mother’s Day it overlaps with May Day, in many communities there is a bridge and there is not much room for maneuver. If the bull has caught you a bit and you have run out of plan to celebrate it, the best thing is complicate the least preparing a homemade menu something special, even if it is almost improvising at the last minute.
April has passed like a gale, leaving us, along the way, weeks of storms and irregular rains, which has further complicated the ability to plan in advance some plan away from home, restrictions aside. The panorama is not the same as it was a year ago, but it almost reminds us a bit of the small chaos that we live in the face of Christmas with so much uncertainty.
But, now more than ever, we want to take advantage of any excuse to disconnect and celebrate dates like Mother’s Day with our family members, although some of us have to do it, once again, virtually and from a distance. And to make it easier for us, we have prepared some menus well complete, varied and simple, with very flexible ideas to adapt at home. May it at least serve as an inspiration for those who have been left without a plan.
1. Super fast recipes
In this first idea we demonstrate that we can prepare a special menu in record time, and be luxurious. By combining various appliances, such as the hob, the oven and the microwave, we can prepare almost everything at the same time and optimize cooking times even more.
Appetizer. Nothing like some shellfish to give any menu a touch of luxury that always puts us in party mode. By serving the scallops as an appetizer we do not have to invest a lot of budget, and we can find them frozen. These parmesan scallops will be ready in 15 minutes, and we can also leave them ready to simply give them the final touch of the oven before serving.
Incoming. A very simple dish to whet your appetite can be the grilled courgette salad, which gains a lot in flavor and presentation with the feta cheese and the aromatic point of mint. Very refreshing, by serving it as a cold or warm salad we don’t have to worry about it getting cold when cooked. We can let it marinate for a few minutes, or add the dressing just before serving to keep the vegetables crisp.
Main dish. The riverside salmon is a dish that never fails and that will solve the menu for us on all kinds of occasions. It is a traditional Asturian recipe that, with good fish, cider and a little fumet (which can be bought), is luxurious and does not take long to prepare.
Dessert. The microwave is our great friend to cook a quick and simple dessert, like this cheesecake in individual cups for which we also do not use sugar, but dates and a little stevia or sweetener to taste. We can decorate it with red fruits, blueberries, strawberries or a jam that we like.

2. With traditional dishes
Mother’s Day can make us a little nostalgic and many of us want to meet again at the table with homemade dishes, the kind that awaken memories and take us back to childhood. Sometimes we forget that the most traditional and homemade recipes are the best and the most enjoyed.
Appetizer. The humble and always generous croquette is not only a symbol of the home cooking of mothers and grandmothers, it has also conquered the menu of the most luxurious restaurants with both traditional and modern versions. We propose to recover the chicken croquettes to whet your appetite in a menu that pays homage to the familiar.
Incoming. A good starter and always appreciated are the mussels a la marinera, with their tasty sauce for dipping bread. This mollusk is a bit of the humble battle shellfish, which is usually found at a good price all year round and does not prevent us from enjoying the intense flavor of the sea without having to spend a kidney on the purchase.
Main dish. As a main dish, we propose to recover a somewhat forgotten recipe, but which will take us back to many family weekend meals, stuffed beef. Traditional flavors in a presentation that also looks very showy with the cut of the piece.
Dessert. A dessert of pure family tradition, with humble roots and that admits many variations, could not be missing. Calatrava bread, typical of Murcia but prepared in many other regions in a similar way, is a delicacy for a simple soul that also drinks from the kitchen of use. At home it has always been made with muffins, but it is also delicious with leftover sponge cake, French toast or Swiss rolls.

3. For traveling mothers
If the honoree on this day has an adventurous soul, is passionate about traveling or loves to try new dishes and flavors from around the world, a good idea may be to dedicate the menu to international recipes. It is a simple way to easily get out of the daily routine and to reminisce a little about those trips that have been postponed indefinitely by the times we live in.
Appetizer. An appetizer that always triumphs among everyone who tries it is the crispy Japanese fry, which in our version of tempura ratatouille will take us on a journey between France and Japan. You just have to master the texture of the dough and fry at a good temperature to obtain that light and fine finish that makes this dish almost addictive.
Incoming. A classic Venetian antipasto is the sarde in saor or pickled sardins, perfect for taking advantage of a healthy and cheap seasonal fish, with surprising flavors. We can prepare them without problems first thing in the morning or the day before, as they gain in flavor over time, and they are delicious served cold with good bread.
Main dish. For the main meal we can take a curious journey in which we again combine different cultures. The riz cashmere is a familiar classic of Swiss cuisine that, however, will remind us a bit of India, also with touches of Latin cuisine by incorporating tropical fruits. It is a simple dish and very appreciated for its mild flavors in which there is nothing spicy, perfect for families with younger children.
Dessert. A very springy and colorful dessert, with which we now travel to Australia and New Zealand, is the pavlova, which we propose to prepare in a mini version with lemon curd and berries. Lemon curd adds more British flavors to the equation, and we can make it homemade or buy it ready-made.

It never hurts to include a 100% vegan menu proposal, without animal products, that can be adapted to almost all the needs of the guests. Vegan recipes will also be suitable for allergy sufferers or intolerant to eggs and dairy, and they don’t have to seem like bland or boring dishes.
Appetizer. Pates, creams or dips for spreading and dipping are always appealing, and as an alternative to the somewhat trite hummus we propose the delicious baba ganoush or mutabal, based on aubergine, which we will also cook quickly in the microwave. It only remains to season it to taste and accompany it with whatever we fancy: vegetable crudités, crispy toast, chips, pita bread, etc.
Incoming. Samosas are a very popular appetizer in India and very simple to prepare if we use purchased phyllo or brick dough. Once we have the vegetable filling ready, we just have to assemble the mini dumplings with the dough already cut, and bake them all at the same time.
Main dish. For the main meal of a vegan menu, we suggest including a good source of protein, but a bit out of the ordinary. Seitan in pepper sauce is very simple and quick to prepare, it will surprise more than one person at home and we can complete it with the garnish that we most want.
Dessert. Nobody at home will protest with a vegan sweet that puts the icing on the menu if we serve the succulent chocolate cake from the Telos restaurant. Perfect for the most chocolatier, it will be luxurious if we serve it with fresh strawberries or some raspberries and mint leaves.
5. Brunch or snack-dinner
We have already proposed several ideas to celebrate Mother’s Day with a brunch at home. The menu can also be easily organized around four courses, adding to the table other elaborations like a good variety of fruits, yogurt, cheeses and some cold cuts, breads, etc.
Appetizer. To whet your appetite, at this time of year a simple banana and strawberry smoothie feels great and feels great, which we can also make vegetable with almond milk. We enrich it with flax seeds, but we could also use chia, sesame, poppy, or, for those with a sweet tooth, some Maria cookies.
Incoming.
