The wheat tortillas, which we find today in any supermarket, are ideal for preparing a handy dinner that everyone likes. It is true that it is enough to prepare the quesadillas with ham and cheese and they are already very good, but why not give it a spin?

It is not that I have discovered gunpowder, but I like how it cooks everything in a single pan to have a super appetizing dinner or meal in just a few minutes, which can also be varied a little with what we have in the fridge. The important thing is that the bacon is never lacking: everything it is cooked in bacon fat. Good for my namesake!
The first thing we have to do is fry sliced bacon in a frying pan with a bit of oil. We are going to cook it until it is crispy and releases its fat. When it’s ready, we reserve it. In that same fat we cook the fresh spinach. Season them with salt and pepper and wait for them to reduce.
While the spinach is being made we are preparing the rest of the ingredients: cut the tomato into slices, dry the mozzarella a little with kitchen paper and also cut it into slices, and grate or finely cut some cured cheese that it blends well. We have used cheddar, but the recipe can also go well with a gouda or even an emmental.
Once the spinach is ready, remove it from the pan and assemble our quesadillas putting mozzarella, spinach, bacon and the other cheese. The important thing is that the cheeses are at the ends, so that they melt well. Once the quesadillas are assembled, we are going to toast in the same pan, which still tastes like bacon. Cook them on both sides over low heat until the pancakes are well browned and the cheese melts. And ready!

These quesadillas constitute a very complete dinner or meal. If you want, they can be accompanied by some hot sauce like the green chili marinade or an, always infallible, pico de gallo. And, although this recipe is not authentically Mexican, no one is going to complain if we serve a good homemade guacamole as a side dish.
