The chef from Madrid has just launched a gazpacho of jalapeños and another of strawberries that do not stand out precisely for their low levels of fat and sugar, respectively. They are now available, as usual, in the gourmet section of El Corte Inglés, the same one where Muñoz has already sold his Easter toast.
These two new references, as pointed out in El Periódico de España, not only attract attention due to their price -15.80 euros per liter- and for the privileged situation that they enjoy inside the establishment —inside boxes full of ice, with which it is falling, but because of its questionable nutritional composition.
The new gazpachos by Dabiz Muñoz, under review
It turns out that when looking at the label of these two strawberry and jalapeño gazpachos from Dabiz Muñoz, one is really surprised, not because of the striking ingredients used, because they are the most caloric on the market. And that the bar had been set very high by Hacendado with that fresh gazpacho that stood out from the rest for those 75 calories per 100 grams. But, beware, it is not that it exceeds it by a few calories. We talk about 206 calories (jalapeños) and 113 calories (strawberries). There is nothing.
As pointed out in the aforementioned newspaper, both summer products sold in half liter containers, so things get really serious when one considers what it would mean to drink a whole bottle (one litre). In this case, we would talk about 565 calories (strawberries) and 1,030 calories (jalapeños), which is half of the recommended daily calories. Or put another way, They are more than a complete McDonald’s menu. consisting of a quarter pounder with cheese, small fries with ketchup and a small regular Coke (totaling 940 according to the chain’s nutritional calculator).
Nutritionist Beatriz Robles speaks
Although he points out that “nutritionists do not like to speak only of kilocalories, because there are very caloric foods with interesting nutrientssuch as nuts”, the nutritionist and food technologist Beatriz Robles, wanted to expose her professional point of view in this regard for EPE. And she is not alone, Antonio Rodríguez, responsible for the SinAzúcar.org project, accompanies her.
For example, from jalapeno gazpacho, which contains green tomato, green pepper, high oleic sunflower oil and olive oil, Rodríguez believes that “it is too high in fat, especially considering that it is a product to drink”. To which he adds: “Besides, it’s sunflower oil in large percentage“. Robles’ nuances go in the same direction: “It has more sunflower oil than olive oil. And the olive oil is refined, not virgin or extra virgin, so we lose part of the antioxidants and bioactive compounds.” And he states: “That’s amazing, because costs more than double than top-brand gazpachos”.
And it is that, judging by the reputation of its author and its price, “nutritionally not a luxury product, it is not better, not even remotely, than any other”, points out the expert. And she clarifies: “Most of the packaged gazpachos, even those of private labels, contain extra virgin olive oil. He’s already quite a few steps behind.”
Then this the fat thing (21 grams per 100), which has almost the same intensity as the green of this gazpacho that the three-starred chef defined on his Instagram profile as “polyjuice potion”. In this regard, Robles comments that “gazpachos usually have around 3% fat that comes from extra virgin olive oil, which is of good quality. seven times more. The energy value is greatly increased without providing us with interesting nutrients. It’s worrying.”

And you are not going to believe that the one with strawberries, which is less caloric than jalapeños, is saved from burning. In this case, it surprises us with an unusual ingredient in gazpacho, sugar. The rest: plum tomatoes, mashed strawberries with sugar and, again, oleic high sunflower oil. It also includes ketchup and ground chipotles.
The first thing that the person in charge of SinAzúcar.org points out confirms what we mentioned at the beginning. “It has a lot of sugar, three times what is usual in this type of product.” If you look at the label, the Strawberry gazpacho from Dabiz Muñoz It has 6.3 grams of sugar per 100 grams of product.
It should also be remembered, as regards the strawberry purée, that the nutritionists and the WHO They have long recommended limiting the consumption of juices and crushed fruits due to their large amount of free sugars, unlike whole pieces of fruit. “It’s not a very high percentage. a Coca-Cola has about 10 grams of sugar for every 100″, says Robles. And he continues: “But we are already talking about that it has added sugars, which gazpachos do not have”.
Before saying goodbye, he does point out that, to be fair, the only advantage that the Madrid chef’s gazpachos provide is their low salt content. “But it doesn’t justify the rest.”
