Depending on the temperature in your area of residence, June is the most common month in our country to start harvesting tomatoes, courgettes, peppers and other summer vegetables. With this production we have prepared a delicious courgette and tomato creamwhich will undoubtedly suit you very well.
The recipe is also great to serve as a starter in small bowls at lunchtime, although at home, we use it more for light dinners that are so popular at this time of year.
In any case, it is an interesting variation on the traditional zucchini cream recipe, as we already did with the zucchini cream with sour apple and caramelized onion, which we obviously also recommend as alternative to traditional.
Cut the onion brunoise and poach it in a saucepan with three tablespoons of extra virgin olive oil. While the onion begins to take color, we chop the courgettes into small pieces. You can leave the skin or remove it according to your taste. I chose to remove a part and leave some pieces with the skin to get more color.
After poach the courgettes for ten minutesStirring from time to time, add the vegetable broth and let the whole cook and reduce until it is very tender. Then we proceed to crush with a hand blender.
With the tomatoes, we prepare a classic tomato fry, and once passed through the food mill, we add five or six tablespoons of this sauce, proceeding to mix it well until our courgette cream changes to an intense orange color.
This vegetable cream, as is generally the case with all, can be lighten optionally by adding a dash of milk or cream, and mix it stirring until integrated. This time we have not done it, since we had a great texture, but it is good that you remember this possibility.

With what to accompany the cream of courgettes and summer tomatoes
To accompany this summer tomato and zucchini cream recipe, you can serve a bit of crispy fried onion and decorate with a few leaves of oregano, good alternatives to homemade croutons. You can also put a little chopped boiled egg and Serrano ham in the center of each plate, as in the traditional recipe for salmorejo from Córdoba.
