From the need to take advantage of various leftovers that were in my fridge, this appetizer based on yogurt, avocado and smoked salmon tartar that is to put a floor (although it is wrong for me to say so). The mixture of flavors and textures is brutal, as they combine perfectly with each other.

I always recommend the use of good raw material and this time is no different. The avocado needs to be at its point so that you can mash it well and mix it with the yogurt. The latter, better if it is Greek and with all its fat. And about salmon, buy the best you can afford. It will be noticeable in the result.
On one side, chop the smoked salmon into small pieces or strips. Chop the onion finely and also the capers. It we mix everything and add the mustard, a pinch of black pepper and a splash of extra virgin olive oil.
On the other hand, beat the yogurt well and add the avocado. We crush it well. Season with salt, pepper, dill, a few drops of Tabasco sauce and a splash of oil. We remove and pass through a strainer to obtain a fine cream.
We divide the tartar in four cups or bowls and also the yogurt and avocado cream, on top. Decorate each glass with half a quail egg, some mullet roe and some oregano leaves or another herb.
