Fish soup is one of our classic festive menu dishes that we like to prepare on special occasions, forgetting about it a little the rest of the year. In the repertoire of spoon dishes it is one of the healthiest and versatile, and we don’t always have to spend a fortune on their ingredients or spend the entire afternoon cooking.
The whiting soup recipe shows that even a humble and simple dish can be very comforting. Is satiating but light, full of nutrients with its healthy proteins and a fair amount of carbohydrates that, leaving us without hunger, will not be heavy. In addition to being a good first course, we like it at home especially for dine well and not suffer difficult digestion to fall asleep.
If we have fumet or fish broth in the pantry or, better yet, homemade in the refrigerator or frozen, it will be much better, but it is worth cooking this soup using only water. With whiting or with other white fish that is on sale at the fishmonger, or even with frozen fish, the result is always appealing on a cool night.
When I have saffron I add a little to enrich the broth and give it more color, and other times I like to give it a spicy touch with some cayenne. The noodles can be thicker or thinner, or you can use a handful of small wonder type pasta, and even rice. And if there are very small children or picky eaters, it becomes a delicious cream if everything is crushed.
