We prepare a good broth, with heads and thorns and the green part of a leek, following the indications of our recipe for fumet or fish stock. We cut the fresh cod loin in portions, or after having desalted it if we had used salted cod.
Chop the onion into a fine brunoise, and the two types of peppers into medium-sized pieces. Peel the potatoes and cut into portions by snapping or tearing so that when cooking they release more starch. In a saucepan, sauté the onion and add the peppers, letting them cook slowly.
Add the concentrated tomato and the potatoes, letting the ingredients mix well, and then add the fish broth, letting everything cook over low heat for about 20 minutes. When the potatoes are almost tender, we add the cod cut into pieces.
We let the whole cook for 5 more minutes and we already have this ready fish and potato stewwhich we can serve in small individual clay bowls, always warning that the potatoes keep a lot of heat.
