We introduce the milk, the sugar, the lemon peel and the cinnamon stick in the Thermomix glass. We program 12 minutes, 100 ºC, spoon speed, reverse rotation. Once the time is up, we leave temper the milk in the glass for 30 minutes. We are restrained with sugar because, once ready, we sweeten the torrijas in sugar and cinnamon or mead. Although you can use more if you prefer.
Cut the loaf of bread for torrijas (we can use ordinary loaf bread, better if it is from the day before and is slightly dry) into 10 slices and place them in a deep fountain. We water with the infused and tempered milk. We turn so that they soak well on both sides.
Beat the eggs in a deep plate and pass the slices of bread through it, covering all sides. Fry in plenty of hot oil (180 ºC), turning so that brown evenly. Remove and drain excess oil with absorbent paper. We finish the torrijas with a sugar and cinnamon batter or a bath of mead. We serve immediately.
