Is Italian mortadella and arugula pizza It has been a discovery in my house. First, because it mixes hot and cold elements, and second, because the joint flavor of all of them is a true marvel, which you should not miss. An ideal recipe to celebrate World Pizza Day.
It is a homemade pizza, made with homemade dough, with a homemade tomato sauce and shredded mozzarella, julienned onion. Once roasted in the oven, it is covered with the arugula and the slices of authentic Italian mortadella and the miracle is produced.
Obviously, it is not possible to use any other sausage than authentic Bologna mortadella, which is not cheap, but which has an unmistakable flavor and texture. With seven or eight very thin slices -they will not be more than 100 g- we can obtain a spectacular result.
We prepare a pizza base following the instructions that we have left you in the link. Once the dough is formed, the let it rest for at least two hours so that it ferments and mild. Afterwards, we knead again degassing, and we stretch it with a little flour on the table, giving it the traditional round shape.
After the time has elapsed, we preheat the oven to the maximum, 235ºC in my case with heat up and down. We arrange the base or pizza dough on a nonstick pizza baking dish and we proceed to cover it with our tomato sauce, which we spread with the back of a spoon.
Cover with plenty of grated mozzarella cheese at the time and distribute the portions of julienned onion on top, proceeding to bake until the base takes color, the edges begin to rise or swell, and the bottom of the pizza is crisp. We take out of the oven.
Fold each slice of mortadella first in half and then in two non-symmetrical folds so that it looks like a handkerchief. We distribute the slices on the outside of the pizza, leaving space in the center to place the arugula, very fresh, washeddrained and lightly seasoned with olive oil and balsamic vinegar or Modena vinegar.
