has always shown off Karlos Arguiñano, both in his interviews and in his programs, of being a man more than familiar. Seven children, his marriage to Maria Luisa ‘Luisi’ Ameztoy and the omnipresence of Pepi Urkiola, his ‘mistress’ have been fundamental throughout his career.
Precisely the latter deceased in 2020 At 94 years old, he left a deep sorrow in the heart of Karlos Arguiñano, who is always moved when he mentions his mother on his program.
Curiously, Urkiola was not a great cook, but “she was a great children’s seamstress”, as Karlos Arguiñano himself explained when making a recipe with which he honored his motherwhich was always closely linked to the world of clothing.
In fact, among Karlos Arguiñano’s anecdotes regarding Pepi, he always mentioned that his mother (born in Beasain, where he would also be born, in the interior of Guipúzcoa) had worked as a seamstress for fashion designer Cristóbal Balenciaga.

However, the fact that Arguiñano’s mother was not a great cook —due to a problem with her legs, which made it impossible for her to move easily, as Karlos Arguiñano explained— did not prevent her from keeping fond memories of one of her star dishes: some macaroni with tomato and tuna.
As a tribute, the Gipuzkoan chef made some simple macaroons in one of their programs, using a natural base for the sauce made of spring onion, green pepper, red pepper and crushed tomato, to which he would later add a couple of cans of canned tuna in olive oil and later gratin with mozzarella.

The recipe, as can be seen, does not have special science, but it does have a lot of flavor and, above all and because of how Arguiñano told it, much love towards such a simple and domestic preparation that it is impossible not to want to do it at home.
