More than two years after the project was announced, the brand new Grupo Robuchon restaurant opens its doors in the capital. After the purchase of the premises occupied for decades by the legendary Embassy, in the midst of Paseo de la CastellanaRobuchon Madrid is the first establishment that the influential restaurant group opens in Spain after adding 27 Michelin stars all over the world.
Founded by French chef Joel Robuchonconsidered the most influential chef of the era post nouvelle cuisine and died in 2018, the powerful group already has more than thirty gastronomic establishments in Europe, Asia and North America, and with the opening of Madrid an outstanding debt with our country is settled to continue its expansion plans. According to a press release, the chef himself he was in love with Spain and its cuisineeven choosing Calp (Alicante) as his summer residence.
A new restaurant concept in three spaces
The historic and great place that occupied the decadent Embassy Tea Room has offered the chef’s heirs a large space in which to develop a different restaurant concept. The idea is to offer different gastronomic possibilities in differentiated areas, distributed in three plants throughout its 950 m2, with a design by the interior designer and architect Lazaro Rosa-Violanand the chef Jorge Gonzalez Carmona as culinary director.
The ground floor houses the so-called L’Ambassade, with four different spaces, a new concept of the group that aims to become the most informal option to taste the chef’s cuisine without losing its hallmarks. Includes an open kitchen area with show cookingits own bakery where you can buy bread and sweets to take away, a bar tapas with the reinterpretation of Spanish cuisine, a tea lounge “informal but sophisticated” and the terracea large outdoor terrace in the heart of Castellana.
The upper floor houses the more formal restaurant named L’Atelier, defined as “a space to imagine, create, develop new ideas and merge different concepts”; here the design of the space and the staging seem to be as or almost more important than the food itself, which will include mythical dishes from the chef from Poitiers in its gastronomic offer as well as new dishes with nods to Spain, such as Segovian suckling pig crunchy with sweet potato garnish in textures.
Finally in the basement wait Le Speakeasy, the “clandestine” place that nowadays seems to be a must in new openings in big cities, whatever that means. Defined as an elegant, sophisticated, warm, more private and distinguished space, signature cocktails are combined here with live music performances.
