Christmas recipes number in the hundreds. In DAP more like thousands. Precisely for this reason it is not always easy select a menu that looks without going crazy with a thousand elaborations.
Today we bring you a proposal of three dishes – starter, main and side dish – that you can prepare without any effort or prior work in less than an hour. And it is not a clickbait dodgy, We have timed it.
We do not suggest a dessert. You can buy it separately or add fruit and traditional Christmas sweets. You don’t have to go crazy either.
The good thing about this menu is that, while the main dish is cooking, it gives us time to prepare the starter and the garnish and in less than an hour you will have a category christmas menu ready to serve.
The main one: roast pork loin
The first thing we are going to make is a roast pork loin with orange and honey. This is one cheap meat, but with this recipe it is very juicy and tasty. Also, if you want to make something a little finer, you can change the loin for pork tenderloin, which also shortens the cooking time.
The first thing we are going to do is Turn on the oven at 200º C. While it is heating, prepare the tenderloin sauce, mixing the juice of two oranges, two heaping tablespoons of honey and two of Dijon mustard. We reserve.
We season the entire loin and we pass it through the pan with a little oil to seal well on all sides. We take it out and put it in a baking dish, pour it over with the orange honey and mustard sauce, and cook it for 20 minutes, covered with aluminum foil, so that it does not overcook. After that time, remove the aluminum foil and let it brown for another 10 or 15 minutes at 180 degrees.
Ideally, if we have time left, we can reduce the sauce in a small pot, so that the flavors concentrate and it becomes thicker.
The garnish: mashed potatoes in a pressure cooker
Once the loin is in the oven we are going to make the Garrison: a wonderful mashed potatoes in a pressure cooker.
First of all, we place the steam cooking rack which usually include all models. This allows the water to be poured into the bottom of the pot without it coming into contact with the potatoes. A glass and a half is enough.
We peel a kilo of potatoes and place them on the rack. We close the pot, turn on the heat and, once the two rings or the rotation valve rise, we lower the heat and also count 20 minutes. Once this time has passed we let the steam release naturally.
To finish, mix the well-mashed potatoes with salt in a large bowl, freshly ground black pepper, 100 to 200 ml of hot milk depending on whether we like the puree more or less thick and four tablespoons of butter, which will dissolve when it comes into contact with the hot potatoes. We mash the potatoes with a fork until we obtain a puree that is not necessarily homogeneous, but without large pieces, which we will serve alongside the roast.
The starter: cockles in wine
While the roast and potatoes are cooking, we are going to make a very simple starter. We have chosen some cockles in wine because they were relatively cheap in our fishmonger, but you can make the same recipe with clams or even mussels if you want to reduce costs.
This recipe has no mystery and we will have it ready before the potatoes have been cooked. We are going to chop two cloves of garlic and half an onion and sauté them in a large frying pan with a couple of tablespoons of extra virgin olive oil. When the vegetables begin to brown, we add A white wine cup, Stirring so that the wine cuts the frying and as soon as we see that it starts to boil, we add the cockles to the pan to make them open with the wine vapors. Once they open, we sprinkle with chopped parsleyand sauté by tapping the pan a few times in case any more cockles open.
Once we have the cockles ready we can put them on the table and now we only have to present the roast when it is ready, accompanied by its sauce, and finish the mashed potatoes.
We have made this entire menu, with time to reduce the barbecue sauce, in less than an hour. All that remains is to open the wine, take out the bread and enjoy with family or friends.
