Mystery does not have too much. After peeling and cutting the courgettes, he seasons them and cooks them over high heat for about five minutes. Then he cleans the leek, also cuts it into moon quarters and adds it, leaving it to cook with a little water for about 10 or 15 minutes.
Once this step is resolved, with the vegetables already quite tender, pour everything into an American blender —also add a pinch of saffron dissolved in 100 grams of warm water; if you want, you can remove the saffron. Add the almonds, feta cheese and blend well.

Here, to taste, you can leave the lumpier or soggy sauce, as you prefer. Also, as is understandable, you can add more or less ingredients —basil would go well— or other nuts such as pine nuts or hazelnuts. Once crushed you could use this zucchini ‘pesto’ however you want.
