Through a completely natural chemical reaction —just like when we add baking soda to certain bakery doughs— our guest ingredient reacts slightly raising the final result and making it fluffier.

Furthermore, since it is a alkaline substance (with a low pH, just like the potato), if we also add an acid component (such as vinegar, a dash of lemon juice or a little whey, for example), we will naturally increase that fluffiness.
