Now that Christmas is over we are all looking for recipes with which to eat well, without getting too involved and with which let’s not fill up anymore. And today in the kitchen of DAP We have a wonderful recipe that more than meets the three aforementioned conditions: the exquisite artichoke salad by the Torres brothers.
The television and popular Torres brothers are in luck this year after having obtained the three Michelin stars for his restaurant in Barcelona, the highest distinction awarded by the guide. Although the twins are haute cuisine prodigies, during their years on TV they showed their more familiar side, with easy but very ingenious recipes.
From his book ‘Torres en la Cocina’ we have recovered this artichoke salad, a very versatile dish that serves both as a starter for a holiday –ideal if you are still looking for ideas for a meal for the Three Kings– and as a simple but successful dinner. It is also great to make the most of some good artichokes, since we are going to use even the outer leaves. We will hardly have any loss.
The first thing we are going to do is cook 2 eggs. Do not exceed 10 minutes and cut the cooking with cold water, so that they do not pass.
Now we are going to clean the artichokes. We remove the outer leaves and reserve half in a bowl with cold water and parsley. When we reach the heart, we clean it well, removing fluff from the centerand put the clean artichokes in water with parsley.
Let’s go now to peel the tomatoes. And we are going to cut the meat, without seeds, into small cubes. In a bowl, mix the tomato with 10 capers, 1 finely chopped shallot, 3 chopped anchovies, and the finely chopped artichoke hearts and egg. Season with a spoon of mustard, another of vinegar, a few drops of lime juice, olive oil, salt and pepper.

The Torres brothers also keep some artichoke leaves to fry them, but we have skipped this step because it complicates the matter a bit and we are going to avoid the fried ones. We only have to serve the salad on the artichoke leaves like a spoon. We finish with some chopped chives.

With what to accompany the artichoke salad
As we mentioned at the beginning, this is a great dish to defat and have lunch or have a rich and healthy dinnerwithout the need for anything else, although we can serve the salad as a first course or a garnish for baked fish such as sea bass in salt or perhaps some chicken breasts.
