Surely when you have seen the photo of the dish served with those small skulls among the pasta, you will have already imagined that we are facing the pasta recipe scariest thing you’ve ever had for dinner Halloween.
Some spaghetti with mushrooms is perfect for scaring the little ones in the house, knowing that They will have fun eating a dish that never failsalthough fork by fork they will have some fear of what may happen to them when eating those terrifying skulls.
Carving mushrooms to turn them into skulls is very simple, just use the nozzle of a pastry bag to remove the eyes and a sharp knife to draw the teeth and the hollow of the nose or nostril. Once the pasta is cooked, you will have it ready to assemble.
We cook the pasta according to the manufacturer’s instructions. You can use black paste, for a darker effect, or use a variety of whole wheat pasta like the one I used, very fine and somewhat dark. While the pasta is cooking, roast a head of garlic in aluminum foil, which will be ready in 10 minutes at 190º in the air fryer.
While everything is being done, we prepare the mushrooms. We cut them in half and we cut out the foot to get the shape of skulls. To make them more similar, we remove the eyes with a nozzle from the pastry bags and with a knife we make the shape of the nose and the stripes that simulate the teeth.
We brown the mushrooms in a frying pan, making sure that they are toasted on all sides so that they the skull effect becomes more evident. Five minutes will be enough. We reserve them until the moment of plating.
We assemble the plate as follows. In a pan we put the roasted and peeled garlic cloves, Add the butter and parsley to taste, sautéing for two minutes.. Add the cooked pasta and a splash of the cooking water, stirring to give it flavor. We add the mushroom skulls and plate immediately.
