Yesterday it opened its doors new culinary project of the IXO group (to which Mugaritz, Topa Sukalderia, Bistró Guggenheim Bilbao, Nerua Guggenheim Bilbao and Bodegón Alejandro already belong), and he did it in a big way, at the Kursaal Congress Center in San Sebastián.
The new restaurant of Basque chef Andoni Luis Aduriz is called Muka, which means “ash” in Basque, and has arrived to replace the old Ni Neuwhich definitively closed its doors on February 6 after 12 years in business and which, like Muka, was also part of the IXO Group, the Kursaal services concession company, which has Aduriz and Bixente Arrieta in front.
Mugaritz. Vanishing Points (Great Chefs)
As its name suggests, this new concept aims to explore everything that revolves around fire, its forms and intensities, from the embers to the flame, the ember, the smoke or the ash. So there is no doubt about the common thread of the entire Muka gastronomic proposal: the grill.
But it will not be a grill to use. That is all we know at the moment, in addition to the fact that a culinary proposal made with seasonal products and the environment designed to share. It has been confirmed, however, that the design of this new space has been carried out by the architect Iñigo Gómez de Segura and the interior designer Luis García de Alemany.
There are already those who assure that it will be an opening that will mark the gastronomic yearalthough we will have to wait to confirm it.
