Sweet or salt? Modernities and local specialties aside, the concept of Spanish breakfast is linked to the traditional Bread with tomato and ham -and its great debate that divides the country-, living with the sweetest alternative of churros and porras. It is not always easy to choose what to fill your stomach with to start the day, but there is a churrería in Leganés that has the definitive solution.
They have named it mountain baton and its name perfectly describes what it is about: a large porra stuffed with tomato and serrano ham. An idea that, at first, may cause rejection in palates that are less adventurous and faithful to tradition, but that, well thought out, is not so badly thrown. And seen the success it has in the hermitagethe mother churrería of this invention, it seems that the fusion of dishes works.
Mixtures of sweet and salty can be a dismal flop or work like a charm, and in this case they must have hit the magic key. The mass of porras and churros actually not so sweet as we can think, well, like so many pan fruits, the greatest amount of sugar is added later, to get our fingers dirty when dipping them in the coffee or chocolate. In fact, the most canonical cheer recipe does not have any sweetener in the dough itself.
In the case of the mountain baton no sugar coating, only the traditional crusty dough that is crunchy on the outside and juicy on the inside that has given the churrería so much fame in its Madrid town, and whose preparation they boast on their social networks showing the preparation process, an art. Good plump and of generous lengththe porras serranas are the definitive breakfast or snack for the undecided or those who need an extra dose of energy.
Of course, in the churrería you can take normal cheers with its sugar and lasso churros or in mini format, also dipped in chocolate and/or filled with cream, but fusion cuisine innovation is not limited to playing with bread with tomato and ham.
For those who prefer the mixed sandwich first thing in the morning, they also have their porra version, stuffed with cheese and cooked hamand better for a lunch we have the churrodog served with chips, or sausages: churros, frankfurter type sausage and ketchup and mustard mix. We are no longer so sure that this last mixture works so well in more delicate stomachs, but without a doubt some potato churros would be great.
