The third edition of the Best Cheesecake in Madrid contest, organized by the Association of Cooks and Pastry Chefs of Madrid (ACYRE), repeats the winner of the first edition with the recipe for charles sierrachef who leads the kitchen of Poncelet. Cheese factory and workshop with a shop specializing in cheeses from all over the world, Poncelet has one of the most popular cheesecakes in the capital that has once again established itself with its peculiar mixture of goat dairy products.
The recipe for the winning cheesecake combines the mandatory Community-certified Madrid products, such as eggs from Granja De Villareal and Vega de San Martín fresh goat cheesewith the peculiar Harborne Blue English Blue Cheese, one of the few blues in the world that is made with milk from this animal. In addition, the cake has cream and sugar, and a classic biscuit and butter base.

Originally it began with violet ice cream, very Madrid, but in this edition of the contest they have presented a more summery couple and that is still a touch that continues to enhance the flavor of the Madrid mountains, the thyme ice cream with cured cheese crumble Marquis of Mendiola de Ciempozuelos. The combination of goat’s milk, with that acid point of the blue cheese, make it a very fresh, creamy and lighter dessert on the palate, less heavy than others cheesecake that use more fatty and dense cheeses.
The cake can be bought in the physical store that the cheese shop has in the center of Madrid (Calle Argensola, 27), at €21.90 the complete piece or 12 euros in smaller individual format. They also have a delicious creamy chocolate cake; all three can be purchased online for exclusive delivery within the Madrid community.
The podium of the best cheesecakes in Madrid in 2023 is completed by the DO Cebreiro fresh cow cheese cake and Vega de San Martín raw milk chocolate, from Philip Parajan (Le Qualité Tasca restaurant), and the smoked cured cheese and blue cheese tart from San Martín de La Vega, from Cristina Zazo (Big Cow restaurant in Getafe), accompanied by crystals of salted caramel.
