Today, to the repertoire of typical Easter sweets that we have under our belt, we add one more: sweet potato fritters. A delicious bite juicy, fluffy and tender, which is perfect to accompany the after-dinner moment. We wash the sweet potatoes, dry them and roast in the oven or microwave. The time will depend on their size and the appliance we use. In the oven they take about 40 minutes, while in the microwave the thing is reduced to 5-10 minutes.
Once ready, let the sweet potatoes warm slightly before peeling them and mashing them with the help of a fork until smooth. reduced to puree. We weigh the result and separate the required 250 grams. We reserve the rest for other recipes.

Once the rest time has elapsed, we heat plenty of oil in a small saucepan. We take small portions of the dough with a teaspoon and drop them into the oil, which should be around 165-170ºC. We turn them so that they brown everywhere before removing, drain and transfer to a plate with absorbent paper.
