This recipe, which takes us back to grandmother’s stewed ribs, can be made in a pressure cooker or a traditional pot, but in this case we are going to make some stewed ribs alone as any of our grandmothers would have done.
The secret of the recipe will be to use a good beef broth, a meat broth for this kind of stew that will allow us to have a very creamy sauce that reminds us of stewed potatoes. Also, to taste you can use marinated ribs for this recipe or also add other liquids such as beer. We are going to bet mainly on red wine and brandy.

In a wide and tall saucepan brown the ribs over medium high heat seasoned on all sides, reserve. In that same pan, make a sauce with the vegetables cut into large paisana over medium heat.
Start with the garlic, onion and carrot and cook for 12 minutes. Add the piquillo peppers and mushrooms and cook another 10 minutes. Add the chorizo pastespices and herbs and cook 1 minute.
Add the alcohols and evaporate. Add the ribs and the broth or water and cook over low heat for 50-60 minutes until tender. The sauce can be linked with cornstarch diluted in water. Season with salt and serve hot.
