Chicken rice is a traditional recipe in many families, a dish of a lifetime, with a taste of home that brings back childhood memories to many of us. It is very easy to prepare, complete and tasty, perfect for children.
Today I gave you one twist and I bring a version in which the rice is accompanied by chicken wings. There are many ways to prepare it, with more or less ingredients, but I will tell you mine. It is a very basic preparation, with few ingredients and relatively quick to prepare.
The dish can be accompanied by a little aioli or garlic mayonnaise, something very traditional in my house. However this is optional. There are other sauces that can go very well, such as romesco sauce. Although it can be served as is, without any accompaniment. Either way is for finger licking.
Finely chop the onion and also the garlic cloves. Reserve. Season the wings with salt and pepper, heat a bottom of oil in a pan and brown them over high heat. We transfer them to a baking dish and we water with beer. We take the dish to the oven, preheated to 180ºC with heat up and down for 15-20 minutes.
In the paella oil we make a stir-fry poaching the onion and garlic. We season to taste. When the vegetables are tender and slightly golden, add a teaspoon of sweet paprika and the tomato, previously grated or crushed. We fry well until all the liquid released by the tomato evaporates.
Add the rice and we redo well for a couple of minutes, while stirring. Add the chicken broth and cook the rice for about 13 minutes (the first five on high heat, then on medium-low). Add the wings and cook for another five minutes.
Before serving the rice we let rest a few minutes, just the right time to set the table and call the diners to the table. We can accompany it with a few points of aioli or romesco sauce and some parsley leaves. To everyone’s taste.

He chicken wings rice It is one of those unique dishes of a lifetime that we have given a twist using only wings. It does not need (many) accompaniments. However, a homemade loaf of bread and a mixed salad can be good table companions and no one is going to object to them. Serve it with some very cold beers or a white wine and enjoy!
