ETYMOLOGY
Its name comes from the Nahuatl ahuacatl, which means “tree testicles”, a name given by the similarity between the fruit and this part of the body. In the course of history, the Spanish modified the term and created the words avocado and avocado. As a curious fact, the word guacamole derives from the Nahuatl ahuacamolli, which means “avocado sauce”.

TYPES OF AVOCADO
The Persian genus has about 90 species that cover what was Mesoamerica, Mexico and all of Central America, therefore three races or botanical varieties of the Persea are recognized:
- Mexicana or auácatl, Persea americana var. drymioflia. It is native to the central and eastern areas of Mexico.
- Guatemalan or quilauácatl, Persea americana var. guatemalensis. It is native to the highlands of Guatemala.
- Antillean or tlacozalauácatl, Persea americana var. American. It is said to be native to the Las Antillas area, but it is believed that the first specimens could have been introduced from Mexico during the colonization period.
In Mexico, 20 wild species related to Persea americana have been documented, such as Persea cinerascens, Persea Pallescens, Persea schiedeana and Persea steyermarkii. The mixing of these three species has resulted in a large number of hybrids, but it was not until 1900 that their production for commercial purposes began.
