Pan-frying fruits, such as buñuelos, donuts or French toast, are very typical throughout Europe to celebrate Carnival and Lent and have all sorts of local variations. And the tradition even reaches the Canary Islands where Carnival tortillas or pancakes are an institution.

And, although they work in some traditional pastry shops, it is a recipe that is usually made at home and not only on these dates.
“Basically they are made during Carnival, also something at Easter, but there are houses (my mother-in-law’s, for example) where they are made every Sunday and whole families go ‘scraping from the dough’Suarez explains. “I keep what’s left over from breakfast in terms of dough and at night I make crepes or waffles with it.”
The recipe, as we will see, has no mystery and, furthermore, the dough hardly requires restso we will have the tortillas ready in just 10 minutes.
This recipe can be made in a large bowl, with a rod mixer, or in a stand mixer, food processor or blender. The procedure, in any case, is the same.
First, we separate the yolks and whites from the eggs, and beat the latter until stiff. Then, add the rest of the ingredients, until obtaining a** homogeneous mass.**
While the dough rests for a few minutes, heat a little oil in a pan: tortillas must be fried, but there cannot be abundant oil, otherwise they would almost take the form of fritters. When the oil is very hot, we make the tortillas one by one, pouring a saucepan into the pan. We must do them on each side, until they are golden, which takes just over a minute.
Once done, we reserve the tortillas on absorbent paper. We serve immediately.
With what to accompany the tortillas
In the Canary Islands, tortillas are usually topped with a little honey, ground cinnamon, or both. For a few years, in addition, an alternative to traditional pumpkin tortillas has been made. To make these tortillas, simply add a little cooked pumpkin to the dough along with the rest of the ingredients.
