Cochinita pibil is a recipe of Yucatecan origin that is made with pork marinated in a seasoning called ‘achiote’. It is wrapped in banana leaves and cooked in a hole in the ground on hot stones.
On the other hand, chilorio is prepared with pork (although there are also variants with turkey or beef or even chicken and soy), a chili sauce, apple cider vinegar, salt and butter.
In this study, Profeco analyzed a total of 18 products, verifying that consumer information was always visibleespecially the nutritional information and the exact quantities of the ingredients that were used in its preparation, paying attention to the sodium levels recommended for daily consumption.
When comparing the amounts of sodium in each of the products subject to this study, the two brands with the most salt as part of their ingredients They were the Sinaloa brand Soy Chilorio, which contains 1,189 milligrams per 100 grams of product, and the Great Value pork Chilorio, which contains 724 milligrams per 100 grams.
Profeco warns that excess sodium in food increases the number of people who have degenerative diseases such as hypertensiona condition that also occurs at increasingly younger ages, which is why it is recommended to moderate its consumption to avoid strokes and a decrease in the amount of calcium in the body.
