I have been preparing this recipe for more than 30 years. pork in sauce and it is always delicious. With a homemade sauce, onion and carrot, we prepare this tender and juicy meat in less than an hour with the security of knowing that today we will have the family happy at lunchtime.
This recipe prepared in a normal saucepan -or in a cocotte if you want-, without it being necessary to use an express pot, or to subject the meat to a long cooking time, which is tender and very tasty. Also, we won’t have much to scrub because this recipe is prepared using only one pot.
Once this stew or stew of pork in sauce is ready, you can store it, freeze it or use it within the next three days, making it perfect for eating at the office, as it heats up beautifully in the microwave. In any case, when you do it you will see that it mysteriously disappears because everyone repeats.
Peel and chop the carrots into small cylinders. Cut the onion in julienne and cut the pieces of lean pork into regular size tacos. If the butcher left us a thicker one, we cut it to match. In a saucepan, brown the meat, seasoning it to taste. We don’t brown it too much. We booked.
In the same pan, poach the onion and carrot, adding the aromatic herbs, and when they soften, but without turning colour, Add the Sherry wine and bring to the boil. Two minutes later, add the beef or chicken broth.
Return the meat to the pan and let the whole cook for 20 minutes. Add a tablespoon of tomato sauce, mix and let cook another 15 minutes moretasting to check that the meat and carrots were tender, or leaving a few more minutes.
We take out the meat and carrots, and turn up the heat. Add a tablespoon of flour and stir well, letting it cook for a couple of minutes so that the texture of the sauce take on a little more body. We serve the sauce over the meat.
