Often when I want to prepare a Lucid and easy appetizer I turn to puff pastry. I like to have the occasional print in the freezer, because it gets me out of trouble and makes me look great. It is very versatile and with it you can prepare these pear and Parmesan puff pastries that I plan to add to my Christmas Eve menu.
The combination of pear and Parmesan works wonderfully, although it can be adapt to taste and dietary restrictions of the guests. For example, the pear can be replaced by apple or mango, the Parmesan by Manchego or another cured cheese and play with the nuts that we like the most.
Although the truth is that I like them pear, walnut and parmesan puff pastry as I tell you below and I would not change a comma of this recipe. If we prepare them in a small format, they are an ideal appetizer to open your mouth at any celebration, but if we make them in a portion size, we can serve them as a starter along with some green leaves as a garnish.
Chop the nuts and soak in water About 10 minutes. Cut the puff pastry sheet into eight equal rectangles (or as similar as possible). With the blunt side of a knife, we draw a slightly smaller rectangle inside, without actually cutting the dough. Prick the inside all over the surface with a fork and spread it with cream cheese.
Transfer the puff pastries to a baking tray covered with parchment paper. Beat the egg and brush the edges. Cut the pears into slices of approximately half a centimeter thickthen we divide them in half lengthwise.
Place the pear slices on the puff pastry and sprinkle with thyme. We spread the nuts and honey on top, as well as the grated Parmesan cheese. We cook the puff pastries in the lower part of the oven, preheated to 210ºC with heat on top and bottom, for 12-14 minutes or until golden. We serve immediately decorating each puff pastry with a few flakes of cheese (optional).

The oven works for us and we only have to transfer them to a serving tray once they are ready. We can accompany them with other appetizers and a glass of cava, wine or the drink that pleases us.
