Experiment with the fermented flavors of the cuisine at Noma, the multi-award winning Danish restaurant Rene Redzepi, will soon be available to everyone from home. What is once again the best restaurant in the world has just launched its first line of garum vegetableavailable now for pre-sale through the website of the latest company of the chef and his team.
It was last summer when Redzepi announced the launch of his new and ambitious project, baptized as ‘Noma Projects’. Conceived as the culmination of many years of research and work in the restaurant laboratory, it is a own line of own and exclusive products that they offer to share with everyone who wants to try the particular flavors of their cuisine.
We know that the garum it was one of the most valued products of Ancient Rome, produced in large quantities and distributed throughout the Empire and beyond. It was about the fermented liquid made from the guts and other remains of fish which in recent years is being recovered through research projects such as that of the University of Cádiz, materialized in Flor de Garum, an approximate recreation of the garum that was done in Pompeii.
But Noma wanted ditch the fish original to experiment with vegetable fermentations that can elevate the dishes of your vegetarian menus to a new dimension of flavors, textures and aromas. The line of garum that is ready for distribution, called Project 001has been inaugurated with the first of these dressings, a 100% vegan version.
To make it they work with organic mushrooms which they pound before mixing with salt and koji, leaving it to ferment for six to eight weeks. The resulting liquid is cold smoked before packaging it, thus achieving a kind of distilled sauce, highly concentrated, rich in earthy and fruity flavors and loaded with umami. others will follow garum with rice base and also egg.
this first garum Vegan is presented in 250 ml glass bottles that can also be purchased in batches. The price has not been made public but it is estimated that it will fluctuate between 17 and 30 euros. Available from March 1, it is already possible to sign up for the presaleavailable at the moment with shipments to countries of the European Union, the United Kingdom and the United States.
To encourage its use, on the same website they have already published several simple recipes in which to use garum of mushrooms and it is hoped that soon the chef and his team will share more ideas of use and other dishes to take advantage of.
