We don’t always have time to make a minimally prepared dinner. For this reason, the key to a daily diet that is varied, as well as comforting, lies in having mechanisms to eat well without having to buy anything extra or get involved in the kitchen.
One of the dishes I make for dinner almost every week are the eggs on the plate.
We all have eggs at home and of course we can make them fried or in an omelette, but this dish is much more versatilebecause we can accompany the eggs with any rest that we have in the fridge.
I usually add homemade tomato sauce (which I try to always have on hand), some cured meat, any remaining cheese that I have and, if possible, some vegetables or mushrooms. I don’t even bother making the eggs in the oven, I have some mini pans that allow me to cook them over low heat on the ceramic hob: they are perfect in less than 10 minutes.
As an accompaniment, a little bread is enough. Nothing easier to have a decent dinner without wasting time.
