It took me too long to try one cream of mushroom soup but since then it has been one of my favorites. Mushrooms are considered a gourmet delight but sometimes we forget the virtues of the humble mushroom, which also has a lot of flavor and is always available at a good price throughout the year.
My favorite recipe is very basic and I am making variations on it. If you prefer it softer and a little more French, you can start with a roux or add a dairy product such as cream, cheese or milk. Is very comforting and tasty both hot, warm or even coldas long as we do not take it directly from the refrigerator.
Although this recipe is very easy to make conventionally, we also have the cream of mushroom soup in Thermomix for those of you who have this food processor or a similar one.
Wash the mushrooms well and dry gently. For a cream I I prefer to use large and whole specimens, they are cheaper than the typical trays in which they are already laminated. Chop and reserve.
Chop the onion and garlic clove. Heat a little oil or butter in a pot or casserole and sauté the onion with a pinch of salt. When it starts to become soft, add the garlic and cook for a couple of minutes.
Add the mushrooms, season with salt and pepper and stir. Pour in the wine and let the alcohol evaporate. Add the thyme and rosemary and let them brown.. Cover with the broth – we can reserve a little and adjust the quantity at the end -, bring to a boil, cover and reduce the temperature. Cook for about 10 minutes.
If it is too liquid, cook a little longer without the lid to reduce it. Separate from heat and grind, adjusting the thickness level to taste. Add salt and serve with chopped chives and a pinch of pepper.
What to accompany cream of mushroom soup with
Like all vegetable creams, The mushroom one can be accompanied by almost anything that comes to mind.. A good bread with a crunchy crust and dense crumb is already a good garnish, but we can use croutons, regañás or picos, which are crunchier. Some grated cheese, toasted seeds, or sautéed smaller mushrooms would also go very well. It is perfect for a light dinner or as the first course on any menu.
