In these days when we already see summer peeking around the corner, with increasingly long afternoons and warm nights, thinking about what to have for dinner becomes complicated when you don’t feel like spending heat between the stoves. A light and healthy dinnerthat is fast and easy, is the solution that will save the day until the evening cool returns.
It is clear that the salad season, but we still do not have tomatoes or summer vegetables or fruits in their splendor. And we don’t want to start resorting to the classic, boring and bland usual salads.
That is why an ideal recipe is the prawn, arugula and papaya salad, with a combination of flavors and textures. delicious, fresh and different, satiating and without ceasing to be light. With already cooked prawns or prawns we have a half-done dish, and we can devour it in just ten minutes or, if we have time, leave the seafood marinating for a while.
We love this dish for the balance between the light but nutritious meat of the prawn, which is enjoyed just as well hot as cold, combined with the tropical sweetness of the papaya -very digestive- and that bitter and somewhat spicy touch of the arugula, which should be very fresh and crunchy, no limp leftovers. A citrus dressing and spices or herbs to taste will round off the flavors and aromas.
We can also add a handful of cherry tomatoes or some kumato tomato, some fresh radishes or even some pickle such as sweet and sour gherkins or onions. And if the arugula is not our friend, the spinach babythe chickweed or the canons will also go wonderfully.
