The Repsol Guide has distributed tonight 97 nuevos soles that become part of the largest gastronomic guide in Spain, with 666 restaurants to his credit, distributed throughout the country –his great competitor, the Michelin Guide, has 255–.
The gala, presented by Charles Laterit has been done like almost all long and boring galas, between speeches by the authorities and jokes by the comedian, which have started on YouTube an hour and a half after the announcement, after a round of interviews with chefs that the Alcorcón Earthquake has made a reality .
It was necessary to wait until almost 9:00 p.m. to discover the new three suns, which have been collected Ivan Sardinianin Toledo, and Juan Carlos’s Corner, in Tenerife. But, as the awards have been made public to the press at 8:00 p.m., the prizes have been awarded before they were presented live.
Those responsible for the guide assure that the teams of both establishments deserve the maximum distinction that is awarded given that “they have known how to grow their gastronomic projects incorporating the sociocultural influences and singularities of their respective environments”.
The guide also recognizes 12 new two soles, spread throughout Spain: Arrea! (Araba), Bodega Katxiña (Gipuzkoa), Cancook (Zaragoza), Estimar (Madrid), Ikaro (La Rioja), Kaleja (Málaga), La Biblioteca (Navarra), Odiseo (Murcia), Pablo (León), Raúl Resino ( Castellón), Tula (Alicante) and Xavier Pellicer (Barcelona).
In the category of a sun enter the guide 83 new establishments. Among them, the guide highlights the recognition of many new chefs, aged between 20 and 25, who have achieved their first sun for restaurants such as Alejandro Serrano (Miranda de Ebro), Cañitas Maite (Casas-Ibáñez), Fuentelgato (Huerta del Marquesado), Kabo (Pamplona) or Ama (Gipuzkoa).
A new selection criteria
The 2022 edition of the Repsol Guide already recognizes 666 restaurants with one, two or three soles, not counting the hundreds of restaurants that also appear in the “Recommended” and “Solete” categories.
Although the distribution of soles has been similar to last year –97 nuevos soles compared to 96 in 2021– those responsible for the guide assure that this year selection criteria changedwith a renewed rating system developed with the advice of the Basque Culinary Center, “which has the ambition of reflecting the global experience of the client, from the time they book until they walk out the door and make the recommendations their own.”
The 53 inspectors They have made a thousand visits throughout Spain, undertaking, according to the organizers, “a thorough review” of the restaurants that already had the distinction. Total 49 soles have been withdrawna much larger sieve than last year, when only 11 restaurants left the list, and all due to transfers or closures.
New sustainable soles
Like the Michelin Guide has “Green star”, the Repsol Guide has its Sustainable Sun, sponsored by Alimentos de España, which recognizes a restaurant in each category for its work in sustainability meatery. The winners have been Coque (Three Suns. Madrid), Monastrell (Dos Soles. Alicante) –which is happy after having lost its Michelin star–, Raíces (One Sun. Talavera de la Reina) and Kofradia (Recommended. Donostia -Saint Sebastian).
