The main difference in the ingredients of the fabada “select recipe”, which is the name of the new version of the dish, and the conventional one, resides in the beans. We have our fabada ready in less than five minutes and as soon as we open the can we have good sensations. The bean almost looks like a faba because of its size, the compango looks good and the broth is more reddish than in the conventional Litoral fabada, much more similar to our homemade fabada.
When trying it, we immediately notice the aftertaste of dishes that, like this one, have been cooked in autoclave –the huge hermetic containers in which cans are cooked in the food industry–: it is still a canned fabada that will never surpass an authentic artisanal fabada. But, having said that, this is a successful product that one eats very well.
The beans are whole and meaty and the broth has a flavor more similar to that of the authentic fabada thanks to a higher quality comp. Although the high temperatures of the autoclave are always not very generous with the texture of meat products, both chorizo and blood sausage, and especially bacon, come out well.
Conclusion
The new fabada gourmet de Litoral does not invent the wheel, but manages to improve an emblematic dish that has accompanied several generations on outings to the mountains or hangover days.
to almost 12 euros per kilo, we are talking about a high price, but much lower than what actually costs an authentic homemade fabada. We see it reasonable considering that we are dealing with an occasional dish.
In short, this is a product that, far from being able to really qualify as gourmet, we can take into account to keep in the pantry before any unexpected.
