I have known tuna in butter since I was a child, since my family on my father’s side is from Cádiz and I spent every summer during my childhood and adolescence in that wonderful province. We ask the fishmonger to cut two or three fresh tuna steaks a centimeter or centimeter and a half thick. We cut them into pieces, obtaining ten or twelve pieces, removing more or less three or four from each fillet.
We put a saucepan on the fire with 100 ml of extra virgin olive oil and add the lard in small amounts, so that it dissolves quickly. We also add the garlic cloves, pepper berries, cloves and the bay leaf. Optionally we can also add a few sprigs of fresh thyme or rosemary, according to our tastes.
We put the pieces of tuna inside the butter and lower the heat. As soon as the fillets have changed color, add the chamomile or the white wine that we have chosen and let the whole cook -with the heat to a minimum- for approximately ten minutes. We put out the fire and let our saucepan warm up.
Carefully transfer the tuna pieces to a tupperware container and cover with the cooking liquid -which is mostly butter-. Remove the cloves, the garlic cloves and the bay leaf. We strain the butter so that it is clean and without more elements than some pepper berries. Let the container cool down inside the refrigerator for the butter to curdle again and we already have it ready to consume in the coming weeks.
